Vegetable Lo Mein with Chicken

Ronzoni - Smart Taste Angel Hair Pasta, 1 container (14 oz ea.)
Pacific Natural Foods - Organic Free Range Chicken Broth, 1 Cup (8 fl.oz.) 240 mL
Red Bell Pepper, 1 large sliced
Yellow Bell Pepper, 1/2 large sliced
White Onion, sliced
Two garlic cloves, minced
Kikkoman Naturally Brewed Soy Sauce, 3 tbsp
Snow Peas, 2 1/2 cups
Celery, two ribs, sliced
Beans Sprouts, 1 container/2 cups
Chow Mein noodles, 1 cup
Boneless Skinless Chicken Breast, 16 oz.
Canola cooking spray, 1 tsp., 4 second spray
Cornstarch, 1 tbsp


Prepare chicken breasts ahead of time. Dice. Slice onion, celery, and peppers. Mince garlic. In a large pot, bring water to boil and prepare past according to directions on the box. In a large skillet or wok sprayed with canola oil, stir fry onion and garlic until the onion is translucent. Have broth, soy sauce, and cornstarch mixed and ready. Add chicken, peppers, celery, and snow peas. Stir fry for one to two minutes, then add chicken broth, soy sauce, and cornstarch. Bring to a boil. Let cook until all veggies are tender but crisp. Serve veggie mix on top of noodles, and top with chow mein noodles.
